Both are mustard oils, both are wood-pressed, and both belong in an Indian kitchen. So what is the difference between VedSaras Black Mustard Oil and Yellow Mustard Oil?
Different seeds
They are pressed from different mustard seed varieties. Black (brown-black) mustard seed is small and dark; yellow mustard seed is pale and golden. The seed decides the oil’s colour, aroma and strength.
Colour and aroma
- Black mustard oil: deep amber, sharply pungent, with the strong “jhaanj” that makes your eyes water a little when the bottle opens.
- Yellow mustard oil: bright golden, with a familiar mustard note that is comparatively milder and rounder.
